Couscous With Cherry Tomatoes And Spring Onions

----- Ingredients ------ 1. Couscous - 8.0 oz 2. Hot vegetable stock - 10.14 fl oz 3. Chickpeas drained - 14.11 oz 4. Red pepper deseeded and diced - 1.0 pc 5. Green pepper deseeded and diced - 1.0 pc 6. Red spring onions sliced - 1.0 bunch 7. Cherry tomatoes halved - as required 8. Extra virgin olive oil - as required 9. Lemon juice - 2.0 tsp 10. Sea salt - as required 11. Freshly ground black pepper - as required 12. Fresh coriander - 2.0 tbsp ------ Method ------ 1. Place the couscous in a bowl and pour over hot water or stock to just cover the surface. 2. Leave until absorbed – about ten minutes or so. 3. Fluff up the grains with a fork. 4. Transfer to a bowl and add chickpeas, peppers, spring onions and cherry tomatoes. 5. Drizzle generously with olive oil and squeeze over lemon. 6. Season and stir in coriander or chives!
