Basic flat bread

------ Ingredients ------ 1. Wheat flour - 1.5 cup 2. White flour - 1.0 cup 3. Dry active yeast - 1.75 tbsp 4. Cornmeal - 0.25 cup 5. Extra cornmeal - 0.5 tsp 6. Sugar - 1.0 tsp 7. Water - 1.25 cup 8. Vegetable oil - 1.0 tbsp 9. Salt - 1.0 tsp ------ Method ------ 1. Preheat oven to 350°F. 2. In a bowl, combine 1/2 cup of flour, sugar, salt, yeast and water. Let stand, covered, in a warm place until bubbly. 3. Then add together the remaining flour, and cornmeal in a large bowl. Also, add the oil. Add yeast mixture to the flour in the bowl. 4. Make a firm dough by mixing with hands. 5. Knead well, until smooth. 6. Stand, covered, in a warm place 20 minutes. 7. Now, shape the dough into 2 rounds. Score the top of these rounds with a sharp knife 1/8" deep. Alternatively, you can make a dent in the center with your thumb. It should be deep enough to be a hole, though not all the way through. 8. Dust a baking sheet with cornmeal. Place the dough rounds on it and dust the top as well, with cornmeal. You may gently push it into the dough. 9. Stand, covered, until nearly doubled. The dough might not exactly double in size because you have kept it flat and also have added a small amount of yeast. It is fine this way. 10. Bake 12-18 minutes. 11.
